Latte vs. Coffee: What's the Deal?

You've stood at the counter, stared at the menu, and wondered... what's the real difference between a "latte" and just "coffee"? One's basically coffee with milk, right? Not quite. The story starts with how they're made, and that changes everything.

What Even ARE "Latte" and "Coffee"?

People often think a latte is just coffee with a lot of milk, but that overlooks the main difference, brewing method. A latte is built on espresso. "Coffee," on the other hand, usually means a beverage made through brewing.

The Core Difference: A latte is an espresso-based drink made with steamed milk. " Coffee " typically refers to a drink made by brewing ground beans with hot water (e.g., drip, pour-over, French press). The brewing method is the key distinction.

For this guide, "coffee" means brewed coffee. This is made by pouring hot water over ground coffee beans and letting it steep for a few minutes. Common methods include drip machines, pour-overs, and the French press. 1

A caffè latte is an espresso-based drink. 3 It has one or two shots of espresso, a lot of steamed milk, and a thin layer of frothed milk (microfoam) on top. 3 The classic ratio is about one part espresso to three or four parts steamed milk, making it milky and creamy. 4

To get the latte, you first have to understand espresso. Espresso isn't a type of bean, it's a brewing method. It works by forcing a small amount of very hot water (around 93°C or 200°F) through finely-ground, packed coffee at super high pressure (about 9 bars). 1 The whole thing is over in just 20 to 30 seconds. 5

The result is a small, concentrated shot of coffee with a reddish-brown foam on top called crema . 1 This crema is a mix of coffee oils and gases and is key to espresso's rich feel and smell. 10 The modern latte couldn't exist without the espresso machine and its steam wand. 11

The term caffè latte is Italian for "coffee and milk". 11 It started in 19th-century Italy as a breakfast drink, often made with Moka pot coffee and hot milk to make it less intense. 11 It moved from homes to cafés in the mid-20th century with the spread of commercial espresso machines. 11

But the latte really blew up in America. In the 1980s, Seattle's coffee scene turned it into the bigger, milkier, and often sweeter drink we know today. 6 It was a simple European drink that got a global-friendly, customizable makeover.

To be clear, a latte is not a café au lait . While both names mean "coffee with milk," a café au lait uses brewed coffee (drip or French press) mixed with steamed milk, usually in a 1:1 ratio. 16 The key difference is the base, espresso for a latte, brewed coffee for a café au lait. 19 This makes the café au lait thinner and often with a stronger coffee flavor than a creamy latte. 17

How They're Made: Pressure vs. Patience

The big differences between a latte and brewed coffee come from how they're made. One is fast and high-pressure, the other is slow and uses gravity. These different methods are why they look, taste, and feel so different.

Making a Latte: Espresso and Steamed Milk

Making a latte involves two things at once: pulling the espresso shot and steaming the milk.

It starts with the espresso. Freshly roasted beans are ground to a fine consistency, like table salt. 21 This fine grind is key, it creates resistance so the high-pressure water extracts flavor properly. 7 About 18 to 20 grams of grounds are measured into a metal filter basket called a portafilter, then tamped (pressed down) with about 30 lbs of pressure to form a dense puck. 21, 22

The portafilter locks into the espresso machine, which forces water at about 93°C (200°F) through the coffee at 9 bars of pressure. 5 This quick, intense extraction takes only 20 to 30 seconds. 21 The result is a small, strong shot of espresso with that signature golden-brown crema. 10

At the same time, the barista works on the milk. Starting with cold milk in a steel pitcher is important, it gives you more time to get the texture right before it gets too hot. 27 The steam wand is placed just below the milk's surface to add air, making a "ripping" sound for a few seconds. 29

Then, the wand is pushed deeper to create a vortex. 30 This breaks down large bubbles and mixes the air in, creating a silky texture called microfoam. 31 The milk is heated to 60,68°C (140,155°F) to maximize its sweetness without burning it, and is then poured into the fresh espresso, often with a cool design on top. 21, 27

Making Drip Coffee: Just Add Water (and Time)

Making drip coffee is simpler. You pour cold water into the machine's reservoir. 34 A heating element inside warms the carafe plate and boils the water for brewing. 35

As the water boils in an aluminum tube, steam bubbles push columns of hot water up a vertical tube (no pump needed!). 37 This hot water, now at 90,96°C (195,205°F), is sprinkled over the coffee grounds through a "showerhead". 35

Gravity pulls the water through the grounds, which takes about five minutes, extracting flavor and caffeine. 40 A paper or metal filter traps the grounds, with paper filters also absorbing most of the coffee's oils. 2 The finished coffee drips into the glass carafe below. 35

So, you have high-pressure emulsification for an espresso vs. low-pressure infusion for drip coffee. An espresso is a complex suspension of solids and oils. Drip coffee is a cleaner solution with most of those filtered out, and this is the science behind why they taste so different.

Taste, Texture, and Smell

Because they're made so differently, a latte and brewed coffee offer completely different experiences. One is creamy and comforting, the other is a clearer taste of the coffee bean. Choosing between them is about what you want: a rich texture or a nuanced flavor.

The Latte: Smooth and Creamy

A good latte is all about balance and texture. Its main feature is its mouthfeel, not just its coffee flavor. The velvety microfoam gives the drink a heavy body and a silky, creamy texture that coats your palate. 7, 44 This smooth feeling comes from a mix of coffee oils, milk fats, and proteins. 47

Taste-wise, the latte is a blend. The strong espresso base is there, but its sharp acidity and bitterness are mellowed by the steamed milk. 4 The natural sweetness of the heated milk balances the espresso's intensity, making the flavor smooth and milky. 3 The creamy texture can hide the more subtle flavors of the coffee bean.

Brewed Coffee: Clear and Complex

Brewed coffee, on the other hand, offers a huge range of flavors. When served black, it lets the coffee bean's true character shine through, showing off its origin, processing, and roast level. 7

A light-roast Ethiopian coffee might taste bright and crisp, with floral smells and berry or citrus notes. 49 A medium-roast Colombian could be more balanced and nutty, with chocolatey flavors. 53 A dark-roast Sumatran might be bold and smoky, with an earthy aroma, and without milk, these flavors are front and center. 7

The mouthfeel of brewed coffee is the opposite of a latte. Most paper filters remove the coffee's oils, so the drink has a light, thin, almost watery body. 2 It's often described as clean or tea-like, which helps you focus on the flavor. 55 Even a French press, which uses a metal filter and leaves more body, isn't nearly as creamy as a latte.

Who's Got More Caffeine?

Which is stronger, a latte or coffee? The answer is tricky because "strong" can mean two things: flavor intensity or caffeine content. Let's break it down.

When it comes to flavor, black brewed coffee usually wins. Its taste is direct and undiluted, with all the bitterness and acidity of the bean. 4 A latte is designed to be milder, with steamed milk softening the espresso's bold notes. 3

Concentration: Ounce vs. Ounce

Ounce for ounce, espresso is way more concentrated than drip coffee. A 1-ounce shot of espresso has about 63 mg of caffeine, while an ounce of drip coffee has only about 12 mg. 57 That means espresso is over five times more concentrated. 62 This is because the fine grind and high pressure extract a ton of caffeine very quickly. 23

Total Caffeine: Cup vs. Cup

But the story flips when you look at a whole serving, because of the different volumes. A small latte with a single 1-ounce espresso shot has about 63 to 68 mg of caffeine. 4 A standard 8-ounce cup of drip coffee has about 95 to 96 mg of caffeine. 57

So, a standard cup of drip coffee usually has more caffeine than a standard single-shot latte.

But... most medium or large lattes in cafés are made with a double shot (doppio). A latte with two shots has about 126 to 128 mg of caffeine, which is more than an 8-ounce cup of drip coffee. 57

Caffeine Counter-Intuition: A standard 8oz cup of brewed coffee (~95 mg) has more caffeine than a single-shot latte (~63 mg). However, most café lattes (12oz+) are made with a double shot, giving them more caffeine (~126 mg) than the standard coffee.

When it comes to health, black coffee and lattes are very different. Black coffee is simple, with almost zero calories. A latte's nutrition changes a lot based on the milk, sweeteners, and size.

Black Coffee: The Baseline

An 8-ounce (240 mL) cup of black coffee has just 2 to 5 calories and is free of fat, carbohydrates, sugar, and protein. 67 Its health value comes from antioxidants like chlorogenic acid, which may help fight inflammation. 7 It also has small amounts of potassium, magnesium, and B vitamins, and studies have linked moderate coffee drinking to some health benefits. 70, 68

The Latte: It's All About the Add-Ins

A latte adds milk, which changes the nutrition. A typical 16-ounce Caffè Latte with 2% or whole milk can contain 150 to 190 calories, 7 to 9 grams of fat, and about 13 grams of protein. 72 The milk also adds calcium and vitamin D, which are good for bone health. 7

But that's just the starting point. The final nutritional value depends almost entirely on your choices.

This reveals something important. When you size up from a Grande to a Venti hot latte, you're paying for more drink, but not more coffee. 95 The extra four ounces is just steamed milk. This makes the Venti hot latte a much milkier, milder drink than the Grande, with the same amount of caffeine.

The Venti Quirk: When ordering a hot latte at Starbucks, sizing up from a Grande (16 oz) to a Venti (20 oz) gets you more milk, but not more espresso. Both sizes contain two shots of espresso. For more caffeine, you need to order an extra shot.
